Bolognese Sauce


A simple meat sauce that beats jar sauces.


1/4 cup extra-virgin olive oil
1 medium onion, coarsely chopped
2 garlic cloves, peeled and coarsely chopped
1 celery stalk, coarsely chopped
1 carrot, coarsely chopped
1 pound ground chuck beef
One 28-ounce can crushed tomatoes
1/4 cup flat-leaf Italian parsley, chopped
8 fresh basil leaves, chopped
Salt and freshly ground black pepper
1/4 cup freshly grated Pecorino Romano

In a large skillet heat the olive oil. When almost smoking, add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the tomatoes, parsley and basil and cook over medium low heat until the sauce thickens. Season with salt and pepper. This will take approximately 1/2 hour. Finish bolognese with Pecorino Romano.

Easy Swedish Meatballs


Super-creamy gravy and tender, tasty meatballs. Shortcuts make this an easy weeknight special.


1-1/2 lb. lean ground beef 
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Pork
 2 eggs, beaten 
1 small onion, finely chopped 
1-1/4 cups water 
1 jar (12 oz.) HEINZ HomeStyle Savory Beef Gravy 
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Heat oven to 400°F. Mix meat, stuffing mix, eggs, onions and water just until blended. Shape into 32 meatballs, each about 1 inch in diameter. Place in 2 foil-lined 13x9-inch pans sprayed with cooking spray. Bake 20 min. or until done (160ºF). Mix gravy and sour cream in large saucepan. Add meatballs; stir to evenly coat. Cook on low heat 5 min. or until sauce is heated through, stirring occasionally.

Salisbury Steak


Rich beefy gravy over mushrooms and onion tender beef patty. A comfort food.

1 lb. ground beef
1/2 envelope of dry onion soup mix
1/4 cup Italian seasoned bread crumbs
2 tablespoon milk
2 tablespoon flour
8 ounces fresh mushrooms, cleaned and sliced
1 can Campbell's Beef Gravy


In a large bowl, mix together the ground beef, onion soup mix, bread crumbs and milk, using your hands. Shape into 4 patties.

Heat the oil in a large skillet, Dredge the patties in flour, just to coat, and brown on both sides in the skillet. Remove the patties to a plate and add the sliced mushrooms to the skillet. Saute' the mushrooms for a several minutes. Add the patties on top of the mushrooms. 

Pour beef gravy over the meat and mushrooms. Cover the skillet and cook on low for about 20 minutes.

Makes 4 servings

Mary Martha's Meatloaf


Family favorite. This recipe was given to Linda by a dear, sweet, inspiring woman and friend, Mary Martha Hargrave. After her death, I renamed the recipe and it was published in Recipes Filled With Love. So many people thanked me for sharing her recipe. It is a hit with many.


1 env. Lipton onion soup mix
2 lb. ground beef (or use ground beef and ground pork mixture)
1 1/2 cups quick oatmeal
2 eggs, beaten
3/4 cups of water
1/3 cup catsup
1 tablespoon flour

In large bowl combine all ingredients; shape into loaf. Bake at 350 for 1 hour.

Easy Shepherd's Pie


This is a winner. Simply, tasty meal that doesn't take a lot of time. The Worcestershire Sauce and Garlic Mashed Potatoes makes this dish extra special. My daughter Stefanie introduced me to this dish. 

1 lb ground beef
1/3 cup ketchup
1 teaspoon Worcestershire Sauce
8 oz frozen mixed vegetables
1/4 cup (1 oz) Cheddar Cheese shredded
1-16 oz pkg. mashed potatoes (or Bob Evans Garlic Mashed Potatoes, already prepared)

Place beef in a large skillet and cook over medium high heat until no trace of pink remains spoon and discard fat. Stir in ketchup and Worcestershire sauce. Add vegetables and cook, stirring for 1 minute. Spoon the beef mixture into a baking dish.
Mix the cheese with the potatoes in a medium bowl. Spread the potatoes over the beef and bake until heated through, 10 minutes.
Heat oven 400.
