Smooth 'N Creamy Pudding Frosting


Do they still make rotary beaters? This is a refreshingly rich and creamy smooth tasting frosting. 

1 package (4-serving size) Jell-O Brand Instant Pudding and Pie Filling, any flavor
1 cup cold milk
3 1/2 cups or 1 container (8 oz.) Cool Whip Whipped Topping, thawed

Combine pudding mix and milk in a small bowl. Beat slowly with rotary beater or at the lowest speed of electric mixer until well blended, about 1 minute. Fold in whipped topping. Spread on the cake at once. Makes 4 cups, or enough for two 9-inch layers. Store frosted cake in the refrigerator.

Chocolate Buttercream Frosting


I'm adding this Chocolate Buttercream Frosting to my collection. I've been searching for homemade frosting's. I'm wanting to get away from store-bought frosting. 



1 cup (2 sticks) butter or margarine, softened
2 cups powdered sugar
1 1/2 cups semi-sweet chocolate morsels
In Classic Batter Bowl, beat butter on medium speed of electric mixer 1 minute or until smooth. Gradually add powdered sugar; beat until light and fluffy, about 2 minutes.

Place chocolate morsels in Small Micro-Cooker®. Microwave, uncovered, on HIGH 1-1 1/2 minutes, stirring after each 20-second interval until melted and smooth. Add chocolate to butter mixture. Beat at medium speed until smooth, scraping sides and bottom of batter bowl, if necessary.

Attach desired tip to Easy Accent® Decorator; fill with about 1 cup of the frosting. Frost cooled cake with remaining frosting. Using decorator, pipe a decorative border around top edge and bottom of cake.


Makes about 3 1/2 cups frosting (enough to frost one 8- or 9-inch layer cake or 24 cupcakes)
